ORGANIC COFFEE FROM THE NASA WEST INDIGENOUS COMMUNITY
Gaitania is a small village in the municipality of Planadas, in the Tolima department of southwestern Colombia. Surrounded by the majestic Andean peaks and shaped by volcanic activity, this region is known for its exceptionally fertile soils enriched with volcanic ash. Coffee here is grown mainly by smallholder farmers, among them the Nasa Wesx indigenous community, which has passed down knowledge of cultivating, harvesting, and processing coffee for many generations.
The Nasa Wesx community works alongside the ASOPEP and ASCI’SP cooperatives, which support farmers in improving coffee quality, implementing sustainable practices, and accessing specialty markets. All the coffee is certified organic, reflecting the community’s deep respect for the land and its resources.
The El Indio lot is a microlot of 100% Caturra, a natural mutation of Red Bourbon. The cherries are carefully hand-picked, with only the ripest selected, then meticulously sorted to remove any defects. The coffee cherries are slowly dried on African beds under controlled temperature until they reach an optimal moisture level of 11%. This patient, slow natural processing preserves the essence of the bean and unlocks its full potential in the cup.
