VAST AND POWERFUL PROCESSING STATION FROM ETHIOPIA'S FINEST COFFEE REGION
Shakisso is a woreda (district) in the Guji zone in the southeastern part of the Oromia region. It is a land of extraordinarily fertile volcanic soils rich in minerals, with a long history of gold mining. Despite its remoteness and challenging terrain, lots from Shakisso have gained international recognition thanks to a unique profile that sets them apart from neighboring Yirgacheffe and Sidamo. Coffee trees here are relatively young compared to other Ethiopian regions, and farmers cultivate plots averaging 4 hectares — larger than the typical figure for the country.
The Shakisso processing station is located in the Hangadhi sub-district. In the 2024–25 season, the station processed coffee cherries from 743 farmers — approximately 1,200,000 kilograms in total. The station team specializes in natural processing, continuously experimenting with process details and consistently collecting data to improve quality.
This lot was processed using the classic natural method: ripe cherries are carefully sorted, washed, and laid out on raised African beds, where they are regularly turned for even drying. The contact between the bean and the fruit pulp throughout the drying process imparts an intense berry sweetness and complexity characteristic of the finest natural lots from the Guji region.
