COMPLEX PROCESSING OF CHERRIES FROM THE MOST VIBRANT COFFEE REGION
Deri Kidame is a kebele (village) in the Wamena district, located in the Guji zone in the southern part of the Oromia region. Guji stands out among Ethiopian coffee regions: its forests remained untouched for a long time due to limited historical access, which preserved the extraordinary fertility of the volcanic red-brown, iron-rich soils. Coffee trees grow here in the shade of African cordia, acacia, and so-called “false bananas” — at altitudes above 2,000 m, where cherries ripen slowly, developing a complex and rich flavor profile.
The processing station was founded by Tracon Trading. Station manager Kenzu Ahmed has been working in the Hambela region for over three years, carefully selecting only the most experienced farmers who supply exclusively ripe red cherries. The station is equipped with 181 drying beds with individual lot-tracing codes and dozens of fermentation tanks for anaerobic and carbonic maceration processing.
This lot was processed using the anaerobic natural method: sorted cherries are placed in sealed containers where slow, controlled fermentation takes place in an oxygen-free environment. The coffee is then laid out on African beds to dry for 18–22 days. Anaerobic processing amplifies the fruit complexity of this exceptional coffee while preserving the clarity and velvety texture of the cup.
