The name of this outstanding producer—Wilton Benítez—is well known far beyond Ukraine. For 26 years, he has been growing coffee with a strong focus on specialty. An exceptional roaster with a Q Processing diploma, he is a true expert in everything related to green coffee—cultivation, processing, and even roasting.
Granja Paraíso 92 is a family farm famous for its innovative approach to coffee production and processing. Located in the Cauca region, in the municipality of Piendamó, almost on the equator, the farm benefits from a cool climate and an optimal amount of sunlight—creating ideal conditions for coffee trees to produce an exceptional product.
Together with other renowned Colombian professionals—Edinson Argote, Wilder Lazo, and others—Wilton is a pioneer of unique processing methods. The revolutionary thermal shock technique with added yeast is truly distinctive within the coffee industry. Many professionals have become coffee champions with coffees like this.
Wilton builds dedicated drying terraces, equips the trees with drip irrigation and shade systems, and runs laboratories with bioreactors that study yeast-driven fermentations and experiment with controlled fermentation. This commitment to innovation and sustainability makes the coffee genuinely exceptional. The cup is incredibly intense and very sweet, while still fully expressing the potential of Geisha—one of the most unique and celebrated varieties in the world.
