The name of this lot is a broad concept encompassing land, tradition, dignity, and wisdom — with a nod to deep farming roots, handwork, and respect for tradition and heritage.
The COMSA cooperative — Cafe Organico Marcala Sociedad Anonimo — is the leading producer of organic coffee in Central America. One of the largest and finest cooperatives, it works with 1,200 farmers. COMSA trains its members in organic farming and responsible, sustainable production.
The cooperative was established in the community of Marcala in central Honduras. At its founding in 2001, the small organization worked with just 69 members — and in nearly 25 years it has grown seventeen-fold. From the very beginning, COMSA was committed to investing in organic production methods as an alternative to conventional ones.
Today COMSA continues to innovate and experiment with organic processes, all in pursuit of extending the life cycle of the coffee tree and delivering exceptional coffee. The terroir is remarkable: with elevations ranging from 1,200 to 1,700 meters above sea level, farmers are able to harvest a wide variety of unique, distinctive cherries. Several lots from the cooperative have won the Cup of Excellence competition.
This coffee from the La Paz region is produced under the strict organic standards established by organic farmer Oscar Alonso, with a particular emphasis on restoring ecological balance and soil regeneration.
